A simple and delicious burrito casserole that combines all the flavors of a burrito in one dish.
Ingrédients

- 1 pound ground beef
- 1 can black beans (15 oz), drained and rinsed
- 1 can corn (15 oz), drained
- 1 can diced tomatoes with green chilies (10 oz)
- 2 cups cooked rice
- 1 tablespoon taco seasoning
- 2 cups shredded cheese
- 8 flour tortillas
- 1 cup salsa
Instructions
- Preheat your oven to 350°F (175°C).
- In a skillet, cook the ground beef until browned.
- Add beans, corn, tomatoes, rice, and taco seasoning to the skillet. Stir until combined.
- Spread a layer of the mixture on the bottom of a baking dish.
- Place four tortillas over the mixture, then add half of the cheese.
- Add another layer of the beef mixture, followed by the remaining tortillas.
- Top with remaining cheese and salsa.
- Bake for 25-30 minutes until the cheese is melted and bubbly.
Notes
- Use ground turkey for a lighter option.
- Add jalapeños for extra heat.
- Top with sour cream or avocado before serving.
