Description

A simple and delicious burrito casserole that combines all the flavors of a burrito in one dish.


Ingrédients

  • 1 pound ground beef
  • 1 can black beans (15 oz), drained and rinsed
  • 1 can corn (15 oz), drained
  • 1 can diced tomatoes with green chilies (10 oz)
  • 2 cups cooked rice
  • 1 tablespoon taco seasoning
  • 2 cups shredded cheese
  • 8 flour tortillas
  • 1 cup salsa

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a skillet, cook the ground beef until browned.
  3. Add beans, corn, tomatoes, rice, and taco seasoning to the skillet. Stir until combined.
  4. Spread a layer of the mixture on the bottom of a baking dish.
  5. Place four tortillas over the mixture, then add half of the cheese.
  6. Add another layer of the beef mixture, followed by the remaining tortillas.
  7. Top with remaining cheese and salsa.
  8. Bake for 25-30 minutes until the cheese is melted and bubbly.

Notes

  • Use ground turkey for a lighter option.
  • Add jalapeños for extra heat.
  • Top with sour cream or avocado before serving.
