Instructions
- Preheat your oven to 375°F (190°C).
- Rub the chicken with olive oil, salt, pepper, garlic powder, and thyme.
- Place the lemon halves inside the chicken cavity.
- Arrange the mixed vegetables around the chicken in a roasting pan.
- Roast the chicken for about 1 hour and 15 minutes or until the internal temperature reaches 165°F (75°C).
- Let the chicken rest for 10 minutes before carving.
