- 1 cup crushed pineapple, drained

Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, mix flour, sugar, baking soda, and salt.
- Add shredded coconut and crushed pineapple to the dry ingredients.
- In another bowl, whisk melted butter, eggs, and vanilla extract.
- Combine wet and dry ingredients until just mixed.
- Pour the batter into a greased loaf pan.
- Bake for 50-60 minutes or until a toothpick comes out clean.
- Let it cool before slicing.

- This bread can be frozen for up to 3 months.
