Ingrédients

  • 4 cups vegetable broth
  • 1 cup dumplings (store-bought or homemade)
  • 1 cup mixed vegetables (carrots, bell peppers, snap peas)
  • 2 tablespoons soy sauce
  • 1 tablespoon lime juice
  • Fresh cilantro for garnish
  • Salt to taste

Instructions

  1. In a pot, heat the red curry paste over medium heat.
  2. Add coconut milk and vegetable broth. Stir well.
  3. Bring the mixture to a simmer.
  4. Add the dumplings and mixed vegetables.
  5. Cook until dumplings are heated through and vegetables are tender.
  6. Stir in soy sauce and lime juice.
  7. Season with salt to taste.
  8. Serve hot, garnished with fresh cilantro.
