A simple and flavorful Thai red curry dumpling soup.
Ingrédients

- 1 tablespoon red curry paste
- 1 can coconut milk (400ml)
- 4 cups vegetable broth
- 1 cup dumplings (store-bought or homemade)
- 1 cup mixed vegetables (carrots, bell peppers, snap peas)
- 2 tablespoons soy sauce
- 1 tablespoon lime juice
- Fresh cilantro for garnish
- Salt to taste
Instructions
- In a pot, heat the red curry paste over medium heat.
- Add coconut milk and vegetable broth. Stir well.
- Bring the mixture to a simmer.
- Add the dumplings and mixed vegetables.
- Cook until dumplings are heated through and vegetables are tender.
- Stir in soy sauce and lime juice.
- Season with salt to taste.
- Serve hot, garnished with fresh cilantro.
Notes
- Use any vegetables you prefer.
- Adjust the spice level by adding more or less curry paste.
- This soup can be made ahead and reheated.
