A simple and delicious dish for Thanksgiving.
Ingrédients

- 1 cup of quinoa
- 2 cups of vegetable broth
- 1 cup of diced bell peppers
- 1 cup of corn
- 1 teaspoon of cumin
- Salt and pepper to taste
Instructions
- Rinse quinoa under cold water.
- In a pot, bring vegetable broth to a boil.
- Add quinoa and reduce heat to low.
- Cover and simmer for 15 minutes.
- Add bell peppers, corn, cumin, salt, and pepper.
- Stir well and cook for another 5 minutes.
- Remove from heat and let it sit for 5 minutes.
- Fluff with a fork and serve.
