A simple and delicious twice baked potato casserole recipe.

- 4 large potatoes
- 1 cup sour cream
- 1 cup shredded cheddar cheese
- 1/2 cup milk
- 1/4 cup green onions, chopped
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Wash and pierce the potatoes with a fork.
- Bake the potatoes for 45 minutes or until tender.
- Let the potatoes cool slightly, then cut them in half and scoop out the insides into a bowl.
- Mix the potato insides with sour cream, cheddar cheese, milk, green onions, salt, and pepper.
- Fill the potato skins with the mixture.
- Top with additional cheese if desired.
- Bake for another 20 minutes until heated through.
Notes
- Make sure to choose large potatoes for best results.
- You can add bacon bits for extra flavor.
- This dish can be prepared ahead of time and baked later.
