Ingrédients

- 2 cups cooked rice
- 2 eggs
- 1 cup mixed vegetables (carrots, peas, corn)
- 2 tablespoons soy sauce
- 2 tablespoons vegetable oil
- 1 teaspoon sesame oil
- 2 green onions, chopped
- Salt and pepper to taste
Instructions
- Heat vegetable oil in a pan over medium heat.
- Add mixed vegetables and stir-fry for 2-3 minutes.
- Push vegetables to one side and crack the eggs on the other side.
- Scramble the eggs until fully cooked.
- Add the cooked rice and soy sauce to the pan.
- Stir everything together and cook for another 3-4 minutes.
- Drizzle with sesame oil and add green onions.
- Season with salt and pepper to taste.

- Use day-old rice for better texture.
- Customize with your choice of vegetables.
- Adjust soy sauce based on your taste preference.
