- 2 medium eggplants
- 1 cup ricotta cheese
- 1/2 cup grated parmesan cheese
- 1/4 cup fresh basil, chopped
- 1 cup marinara sauce
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Slice the eggplants lengthwise into thin strips.
- Sprinkle salt on the strips and let them sit for 15 minutes to remove excess moisture.
- Rinse and pat dry the eggplant strips.
- Spread ricotta cheese, parmesan cheese, and basil on each strip.
- Roll up the strips and place them seam side down in a baking dish.
- Cover with marinara sauce.
- Bake for 25 minutes.
