Description

A classic Italian dish made with layers of breaded eggplant, marinara sauce, and cheese.


Ingrédients

  • 2 large eggplants, sliced
  • 2 cups marinara sauce
  • 2 cups mozzarella cheese, shredded
  • 1 cup parmesan cheese, grated
  • 1 cup breadcrumbs
  • 2 eggs, beaten
  • 1/4 cup olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Slice the eggplants and sprinkle with salt. Let them sit for 30 minutes to draw out moisture.
  3. Rinse and pat the eggplants dry.
  4. Dip each slice in beaten eggs, then coat with breadcrumbs.
  5. In a skillet, heat olive oil and fry the eggplant slices until golden brown.
  6. In a baking dish, layer marinara sauce, fried eggplant, mozzarella, and parmesan.
  7. Repeat the layers until all ingredients are used, finishing with cheese on top.
  8. Bake for 25-30 minutes until bubbly and golden.
  9. Let it cool for a few minutes before serving.
