Description
Eggs Benedict is a classic breakfast dish featuring poached eggs, Canadian bacon, and hollandaise sauce on an English muffin.

- 2 English muffins, split
- 4 large eggs
- 4 slices Canadian bacon
- 1/2 cup hollandaise sauce
- 1 tablespoon white vinegar
- Salt, to taste
Instructions
- Toast the English muffins until golden brown.
- In a skillet, cook Canadian bacon until heated through.
- Fill a pot with water and bring to a simmer. Add vinegar.
- Crack eggs into a small bowl and gently slide them into the simmering water.
- Poach eggs for 3-4 minutes until whites are set and yolks are runny.
- Remove eggs with a slotted spoon and drain on paper towels.
- Assemble by placing bacon on each muffin half, adding poached eggs, and drizzling with hollandaise sauce.
Notes
- Make sure to serve immediately for best results.
- Hollandaise sauce can be made in advance and gently reheated.
