Ingrédients

  • 1 lb Beef Tenderloin
  • 2 tbsp Olive Oil
  • 2 cloves Garlic, minced
  • 1 tsp Salt
  • 1/2 tsp Black Pepper
  • 1 tsp Fresh Rosemary, chopped
  • 1 lb Asparagus, trimmed
  • 1 cup Cherry Tomatoes
  • 1/2 cup Balsamic Vinegar
  • 1/4 cup Honey

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Season the beef tenderloin with olive oil, garlic, salt, pepper, and rosemary.
  3. Heat a skillet over medium-high heat and sear the beef on all sides.
  4. Transfer the beef to a baking dish and roast in the oven for 25 minutes.
  5. While the beef cooks, toss asparagus and cherry tomatoes with olive oil, salt, and pepper.
  6. Place the vegetables on a baking sheet and roast for 15 minutes.
  7. In a saucepan, combine balsamic vinegar and honey. Cook until thickened.
  8. Slice the beef and serve with roasted vegetables, drizzled with balsamic reduction.

  • Let the beef rest for 10 minutes before slicing.
  • Adjust seasoning to taste.
