A fancy dinner to celebrate New Year’s Eve with style.
Ingrédients

- 1 lb Beef Tenderloin
- 2 tbsp Olive Oil
- 2 cloves Garlic, minced
- 1 tsp Salt
- 1/2 tsp Black Pepper
- 1 tsp Fresh Rosemary, chopped
- 1 lb Asparagus, trimmed
- 1 cup Cherry Tomatoes
- 1/2 cup Balsamic Vinegar
- 1/4 cup Honey
Instructions
- Preheat the oven to 400°F (200°C).
- Season the beef tenderloin with olive oil, garlic, salt, pepper, and rosemary.
- Heat a skillet over medium-high heat and sear the beef on all sides.
- Transfer the beef to a baking dish and roast in the oven for 25 minutes.
- While the beef cooks, toss asparagus and cherry tomatoes with olive oil, salt, and pepper.
- Place the vegetables on a baking sheet and roast for 15 minutes.
- In a saucepan, combine balsamic vinegar and honey. Cook until thickened.
- Slice the beef and serve with roasted vegetables, drizzled with balsamic reduction.
Notes
- Let the beef rest for 10 minutes before slicing.
- Adjust seasoning to taste.
- Pair with a nice red wine.
