- 2 cups cooked chicken, shredded
- 1 can black beans, drained and rinsed
- 1 can corn, drained
- 1 cup salsa
- 1 cup shredded cheese
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1 cup cooked rice
- 1/2 cup chopped bell peppers
- 1/2 cup chopped onion
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, combine chicken, black beans, corn, salsa, cheese, cumin, chili powder, rice, bell peppers, and onion.
- Spread the mixture in a greased baking dish.
- Cover with foil and bake for 25 minutes.
- Remove foil, sprinkle additional cheese on top, and bake for another 10 minutes.
- Let cool for a few minutes before serving.
Notes
- Can substitute chicken with turkey or tofu for a different protein.
- Adjust spice level by adding jalapeños or hot sauce.
