Ingrédients

  • 1 cup of sticky rice
  • 1 cup of coconut milk
  • 1/2 cup of sugar
  • 1 cup of water
  • 1/2 cup of ripe mango, diced
  • 1/4 cup of grated coconut
  • 1 cup of lumpia wrappers
  • 1/2 pound of ground pork
  • 1/4 cup of carrots, diced
  • 1/4 cup of green beans, chopped
  • 1 tablespoon of soy sauce
  • Oil for frying

Instructions

  1. Rinse sticky rice in water and soak for 4 hours.
  2. In a pot, combine coconut milk, sugar, and water. Heat until sugar dissolves.
  3. Add soaked sticky rice and cook until tender.
  4. Mix ground pork, carrots, green beans, and soy sauce in a bowl.
  5. Place a spoonful of the mixture in a lumpia wrapper and roll tightly.
  6. Heat oil in a pan and fry lumpia until golden brown.
  7. Serve sticky rice topped with diced mango and grated coconut.

Notes

  • Sticky rice can be prepared a day ahead.
  • Keep lumpia warm in the oven.
  • Adjust sugar according to taste.
