Instructions
- Rinse the rice under cold water.

- Add the rice and toast for 2 minutes.
- Pour in the vegetable broth.
- Add salt and pepper.
- Bring to a boil, then reduce heat and cover.
- Cook for 18 minutes or until the rice is tender.
- Stir in mixed vegetables and cook for an additional 5 minutes.
Notes
- Adjust seasoning to taste.
- Use any vegetables you prefer.
- Leftovers can be stored in the fridge for up to 3 days.
