Instructions
- Scramble the eggs in a skillet.
- Add bell peppers, onions, and cooked sausage or bacon. Cook until vegetables are soft.
- Season with salt and pepper.
- Lay tortillas flat and add a portion of the egg mixture and cheese to each.
- Roll up the tortillas tightly and place them seam side down.
- Wrap each burrito in plastic wrap and then in aluminum foil.
- Label and freeze burritos for later use.
