Description
A traditional fruit cake for Christmas celebrations.
Ingrédients

- 2 cups mixed dried fruits
- 1 cup unsalted butter
- 1 cup brown sugar
- 4 large eggs
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon ground cinnamon
- 1 teaspoon ground nutmeg
- 1/2 cup chopped nuts
- 1/2 cup orange juice
- 1/4 cup brandy
Instructions
- Preheat your oven to 300°F (150°C).
- In a bowl, mix dried fruits, nuts, orange juice, and brandy. Let it soak for an hour.
- In another bowl, cream the butter and brown sugar.
- Add eggs one at a time, mixing well after each addition.
- Sift together flour, baking powder, cinnamon, and nutmeg; fold into the wet mixture.
- Add the soaked fruit mixture and mix thoroughly.
- Pour the batter into a greased cake pan.
- Bake for 1.5 to 2 hours or until a toothpick comes out clean.
- Let it cool before serving.
Notes
- Store in a cool place for enhanced flavor.
- Can be made weeks in advance.
- Top with icing or leave plain.
