Ingrédients

- 2 cups mixed greens
- 1 cup cherry tomatoes, halved
- 1 cucumber, sliced
- 1 bell pepper, diced
- 1/4 red onion, thinly sliced
- 1/4 cup olives, pitted and sliced
- 1/4 cup feta cheese, crumbled
- 2 tablespoons olive oil
- 1 tablespoon balsamic vinegar
- Salt and pepper to taste
Instructions
- Wash and dry the mixed greens.
- In a large bowl, combine mixed greens, tomatoes, cucumber, bell pepper, red onion, and olives.
- Toss the salad gently to mix the ingredients.
- In a small bowl, whisk together olive oil, balsamic vinegar, salt, and pepper.
- Drizzle the dressing over the salad and toss again.
- Top with feta cheese and serve immediately.

- Feel free to add other vegetables or proteins.
- Store any leftover salad in the refrigerator for up to one day.
