Description

Garlic herb butter roast chicken is a flavorful and juicy dish that combines the richness of butter with the freshness of herbs and garlic.

  • 1 whole chicken (about 45 pounds)
  • 1/2 cup unsalted butter, softened
  • 4 cloves garlic, minced
  • 2 tablespoons fresh rosemary, chopped
  • 2 tablespoons fresh thyme, chopped
  • 1 tablespoon fresh parsley, chopped
  • Salt and pepper to taste
  • 1 lemon, halved

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a bowl, mix the softened butter, minced garlic, rosemary, thyme, parsley, salt, and pepper.
  3. Pat the chicken dry with paper towels.
  4. Gently loosen the skin of the chicken and rub the garlic herb butter underneath the skin and all over the chicken.
  5. Stuff the cavity with lemon halves.
  6. Place the chicken in a roasting pan.
  7. Roast in the preheated oven for 1 hour and 15 minutes or until the internal temperature reaches 165°F (75°C).
  8. Let it rest for 10-15 minutes before carving.
