A savory garlic herb chicken served with creamy mashed potatoes and roasted carrots.
Ingrédients

- 4 chicken breasts
- 4 cloves garlic, minced
- 2 tablespoons olive oil
- 1 tablespoon fresh rosemary, chopped
- 1 tablespoon fresh thyme, chopped
- Salt and pepper to taste
- 2 pounds potatoes, peeled and cubed
- 1/2 cup milk
- 4 tablespoons butter
- 1 pound carrots, peeled and cut into sticks
Instructions
- Preheat your oven to 400°F (200°C).
- In a bowl, mix olive oil, garlic, rosemary, thyme, salt, and pepper.
- Coat the chicken breasts with the mixture.
- Place the chicken on a baking sheet and roast for 25-30 minutes.
- While the chicken cooks, boil the potatoes until tender.
- Drain the potatoes and mash them with milk and butter.
- On another baking sheet, spread the carrot sticks and roast for 20 minutes.
- Serve the chicken with mashed potatoes and roasted carrots.
