Description

A savory garlic herb chicken served with creamy mashed potatoes and roasted carrots.


Ingrédients

  • 4 chicken breasts
  • 4 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped
  • Salt and pepper to taste
  • 2 pounds potatoes, peeled and cubed
  • 1/2 cup milk
  • 4 tablespoons butter
  • 1 pound carrots, peeled and cut into sticks

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, mix olive oil, garlic, rosemary, thyme, salt, and pepper.
  3. Coat the chicken breasts with the mixture.
  4. Place the chicken on a baking sheet and roast for 25-30 minutes.
  5. While the chicken cooks, boil the potatoes until tender.
  6. Drain the potatoes and mash them with milk and butter.
  7. On another baking sheet, spread the carrot sticks and roast for 20 minutes.
  8. Serve the chicken with mashed potatoes and roasted carrots.

  • Adjust herbs according to your preference.
  • Use unsalted butter for better control of salt.
