- 2 cups water
- 1 lb shrimp, peeled and deveined
- 4 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon paprika
- Salt and pepper to taste
- Juice of 1 lemon
- 2 tablespoons parsley, chopped
Instructions
- Rinse quinoa under cold water.
- In a pot, combine quinoa and water. Bring to a boil.
- Reduce heat, cover, and simmer for 15 minutes or until water is absorbed.
- In a pan, heat olive oil over medium heat.
- Add garlic and cook until fragrant, about 1 minute.
- Add shrimp, paprika, salt, and pepper. Cook until shrimp are pink, about 5 minutes.
- Stir in lemon juice and parsley.
- Serve shrimp mixture over quinoa.
