  • 1 ½ teaspoons baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 2 large eggs

  • 1 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water
  • 1 cup shredded coconut
  • 1 cup chopped pecans
  • 1 cup sweetened condensed milk

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour a sheet pan.
  2. In a large bowl, mix flour, sugar, cocoa powder, baking soda, baking powder, and salt.
  3. Add eggs, buttermilk, vegetable oil, and vanilla. Beat on medium speed for 2 minutes.
  4. Stir in boiling water until smooth.
  5. Pour batter into the prepared pan and bake for 30-35 minutes.
  6. While baking, prepare the frosting by combining coconut, pecans, and sweetened condensed milk in a saucepan over medium heat.
  7. Stir the frosting until thickened, then let it cool slightly.
  8. Once the cake is baked, let it cool completely before spreading the frosting on top.
