- 1 onion, diced
- 2 celery stalks, diced
- 2 carrots, diced
- 1 cup vegetable broth
- 1 teaspoon dried thyme
- 1 teaspoon dried sage
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- Preheat your oven to 350°F (175°C).
- In a large skillet, heat olive oil over medium heat.
- Add onion, celery, carrots, and sauté until soft.
- Stir in herbs, salt, and pepper.
- In a large bowl, combine sautéed vegetables with gluten-free bread cubes.
- Pour vegetable broth over the mixture and stir to combine.
- Transfer to a baking dish and cover with foil.
- Bake for 30 minutes, then remove foil and bake for an additional 10-15 minutes until golden brown.
