A delicious gluten and dairy free Thanksgiving feast.

- 2 cups gluten-free flour
- 1 cup almond milk
- 1 cup vegetable broth
- 1/2 cup olive oil
- 1 tablespoon apple cider vinegar
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 tablespoon garlic powder
- 2 cups mixed vegetables (carrots, green beans, and sweet potatoes)
- 1 cup cranberries
- 1 tablespoon maple syrup
- 1 teaspoon cinnamon
Instructions
- Preheat your oven to 375°F (190°C).
- In a bowl, mix gluten-free flour, salt, black pepper, and garlic powder.
- Add almond milk, olive oil, and apple cider vinegar to the dry ingredients.
- Mix until smooth, then spread in a baking dish.
- In another bowl, combine mixed vegetables, vegetable broth, cranberries, maple syrup, and cinnamon.
- Pour the vegetable mixture over the batter in the baking dish.
- Bake for 45 minutes or until golden brown.
- Let it cool for 10 minutes before serving.
Notes
- Store leftovers in an airtight container.
- Can be served warm or cold.
