  • Salt and pepper to taste

Instructions

  1. Rinse the quinoa under cold water.
  2. In a pot, combine quinoa and vegetable broth. Bring to a boil.
  3. Reduce heat and simmer for 15 minutes until quinoa is cooked.
  4. In a skillet, heat olive oil over medium heat.
  5. Add carrots, celery, and onion. Sauté until soft.
  6. Add cooked quinoa to the skillet.
  7. Stir in thyme, rosemary, salt, and pepper. Mix well.
  8. Serve warm.
