Ingrédients

- 1 cup quinoa
- 2 cups vegetable broth
- 1 cup chopped carrots
- 1 cup chopped celery
- 1 cup chopped onion
- 2 tablespoons olive oil
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
Instructions
- Rinse the quinoa under cold water.
- In a pot, combine quinoa and vegetable broth. Bring to a boil.
- Reduce heat and simmer for 15 minutes until quinoa is cooked.
- In a skillet, heat olive oil over medium heat.
- Add carrots, celery, and onion. Sauté until soft.
- Add cooked quinoa to the skillet.
- Stir in thyme, rosemary, salt, and pepper. Mix well.
- Serve warm.
Notes
- This dish can be made ahead and reheated.
- Feel free to add nuts or dried fruits for extra flavor.
