Ingrédients

  • 4 cups of vegetable broth
  • 1 cup of diced carrots
  • 1 cup of chopped celery
  • 1 cup of chopped onions
  • 1 teaspoon of dried thyme
  • 1 teaspoon of salt
  • 1/2 teaspoon of black pepper
  • 2 tablespoons of olive oil

Instructions

  1. Rinse quinoa under cold water.
  2. In a pot, combine quinoa and vegetable broth. Bring to a boil.
  3. Reduce heat, cover, and simmer for 15 minutes.
  4. In a skillet, heat olive oil over medium heat. Add carrots, celery, and onions.
  5. Sauté until vegetables are tender.
  6. Add cooked quinoa, thyme, salt, and pepper to the skillet. Stir well.
  7. Cook for an additional 5 minutes, stirring occasionally.
  8. Serve warm.
