Delicious gluten free sides for your Thanksgiving dinner.
Ingrédients

- 2 cups of quinoa
- 4 cups of vegetable broth
- 1 cup of diced carrots
- 1 cup of chopped celery
- 1 cup of chopped onions
- 1 teaspoon of dried thyme
- 1 teaspoon of salt
- 1/2 teaspoon of black pepper
- 2 tablespoons of olive oil
Instructions
- Rinse quinoa under cold water.
- In a pot, combine quinoa and vegetable broth. Bring to a boil.
- Reduce heat, cover, and simmer for 15 minutes.
- In a skillet, heat olive oil over medium heat. Add carrots, celery, and onions.
- Sauté until vegetables are tender.
- Add cooked quinoa, thyme, salt, and pepper to the skillet. Stir well.
- Cook for an additional 5 minutes, stirring occasionally.
- Serve warm.
Notes
- This dish can be made ahead of time and reheated.
- Feel free to add your favorite herbs.
- Store leftovers in the refrigerator for up to 3 days.
