- 1 cup cornmeal
- 1/2 cup all-purpose flour
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon paprika
- 1 cup buttermilk
- Vegetable oil for frying
Instructions
- Rinse catfish fillets and pat dry.
- In a bowl, mix cornmeal, flour, salt, pepper, and paprika.
- Dip each fillet in buttermilk, then coat with the cornmeal mixture.
- Heat oil in a skillet over medium heat.
- Fry fillets for 4-5 minutes on each side until golden brown.
- Remove and drain on paper towels.
- Serve immediately with your choice of sides.
