Ingrédients

  • 1/4 cup feta cheese, crumbled
  • 1/4 cup parsley, chopped
  • 1 egg
  • 2 cloves garlic, minced
  • 1 teaspoon oregano
  • Salt and pepper, to taste
  • 1 cup orzo pasta
  • 1 lemon, zested and juiced
  • 2 tablespoons olive oil
  • 2 cups chicken broth

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, mix ground chicken, breadcrumbs, feta, parsley, egg, garlic, oregano, salt, and pepper.
  3. Form the mixture into meatballs and place them on a baking sheet.
  4. Bake meatballs for 20 minutes or until cooked through.
  5. While meatballs are baking, heat olive oil in a pot.
  6. Add orzo and toast for 1-2 minutes.
  7. Add chicken broth, lemon juice, and zest to the pot; bring to a boil.
  8. Reduce heat and simmer until orzo is tender.
  9. Serve meatballs over lemon orzo.
