Description
A healthy and flavorful Greek chicken quinoa bowl.
Ingrédients

- 1 cup quinoa
- 2 cups water
- 2 chicken breasts, grilled and sliced
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/2 red onion, thinly sliced
- 1/2 cup feta cheese, crumbled
- 1/4 cup olives, pitted and sliced
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- Salt and pepper to taste
Instructions
- Rinse the quinoa under cold water.
- Combine quinoa and water in a pot. Bring to a boil.
- Reduce heat, cover, and simmer for 15 minutes.
- Remove from heat and let it sit for 5 minutes. Fluff with a fork.
- In a bowl, mix olive oil, lemon juice, salt, and pepper.
- Add grilled chicken, tomatoes, cucumber, onion, feta, and olives to the quinoa.
- Pour dressing over the mixture and toss gently.
- Serve immediately or chill in the refrigerator before serving.
Notes
- Use cooked chicken for quicker preparation.
- Customize vegetables as per preference.
- This bowl can be stored in the fridge for 2-3 days.
