  • 1 cup Greek yogurt
  • 1/2 cup sugar
  • 1/4 cup honey
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 cups all-purpose flour
  • 1/2 cup walnuts, chopped (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix the mashed bananas and Greek yogurt.
  3. Add sugar, honey, eggs, and vanilla extract. Mix well.
  4. In another bowl, whisk together baking soda, salt, and flour.
  5. Combine the wet and dry ingredients. Stir until just combined.
  6. If using, fold in the walnuts.
  7. Pour the batter into a greased loaf pan.
  8. Bake for 60 minutes or until a toothpick comes out clean.
  9. Let it cool before slicing.
