Ingrédients
- Green beans – 1 pound
- Brussels sprouts – 1 pound
- Spinach – 4 cups
- Olive oil – 2 tablespoons
- Garlic – 3 cloves
- Lemon juice – 2 tablespoons
- Salt – to taste
- Pepper – to taste
Instructions
- Preheat oven to 400°F (200°C).
- Trim ends of green beans and Brussels sprouts.
- In a large bowl, toss green beans and Brussels sprouts with olive oil, salt, and pepper.
- Spread on a baking sheet and roast for 20 minutes.
- In a skillet, heat remaining olive oil over medium heat.
- Add minced garlic and sauté until fragrant.
- Add spinach and cook until wilted.
- Combine roasted vegetables and sautéed spinach in a serving dish.
- Drizzle with lemon juice before serving.

- Adjust the lemon juice according to your taste.
- You can add nuts for extra crunch.
