Description
A light and fragrant cake infused with grey lavender, topped with a honey lemon glaze.

- 1 1/2 cups all-purpose flour
- 1/2 cup sugar
- 1/2 cup unsalted butter, softened
- 2 large eggs
- 1/2 cup milk
- 2 tablespoons dried grey lavender
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/4 cup honey
- 1 tablespoon lemon juice
- 1 teaspoon lemon zest
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, cream together butter and sugar.
- Add eggs one at a time, mixing well after each.
- Stir in milk and lavender.
- In another bowl, whisk together flour, baking powder, and salt.
- Gradually add dry ingredients to the wet mixture.
- Pour batter into a greased cake pan.
- Bake for 30-35 minutes or until a toothpick comes out clean.
- Let cool before glazing.
- For glaze, mix honey, lemon juice, and zest until smooth. Pour over the cooled cake.
Notes
- Store leftovers in an airtight container.
- Can substitute fresh lavender for dried.
- Adjust honey for desired sweetness.
