- 1 lb ground beef
- 2 medium sweet potatoes, diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, chopped
- 2 tsp paprika
- 1 tsp cumin
- Salt to taste
- Pepper to taste
- 2 tbsp olive oil
Instructions
- Heat olive oil in a skillet over medium heat.
- Add chopped onion and bell pepper, sauté for 3-4 minutes.
- Add minced garlic and cook for another minute.
- Add ground beef, breaking it apart, and cook until browned.
- Add diced sweet potatoes, paprika, cumin, salt, and pepper.
- Cover and cook for 15-20 minutes, stirring occasionally, until sweet potatoes are tender.
- Serve warm.

- You can add other vegetables like spinach or zucchini.
- Store leftovers in an airtight container in the fridge for up to 3 days.
