Ingrédients

- 1 lb ground beef
- 2 medium sweet potatoes, diced
- 1 tablespoon olive oil
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- Salt and pepper to taste
- 1 cup black beans, drained and rinsed
- 1 avocado, sliced
- 2 cups spinach
- 1 lime, juiced
Instructions
- Preheat your oven to 400°F (200°C).
- Toss diced sweet potatoes in olive oil, paprika, garlic powder, salt, and pepper.
- Spread sweet potatoes on a baking sheet and roast for 25-30 minutes.
- In a skillet, cook ground beef over medium heat until browned.
- Add black beans to the skillet and cook until heated through.
- In bowls, layer spinach, roasted sweet potatoes, ground beef mixture, and avocado.
- Drizzle lime juice over the top before serving.
Notes
- Feel free to add other vegetables as desired.
- This bowl can be made ahead and stored in the fridge for meal prep.
