  • 1 cup black beans, drained and rinsed
  • 1 avocado, sliced
  • 2 cups spinach
  • 1 lime, juiced

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Toss diced sweet potatoes in olive oil, paprika, garlic powder, salt, and pepper.
  3. Spread sweet potatoes on a baking sheet and roast for 25-30 minutes.
  4. In a skillet, cook ground beef over medium heat until browned.
  5. Add black beans to the skillet and cook until heated through.
  6. In bowls, layer spinach, roasted sweet potatoes, ground beef mixture, and avocado.
  7. Drizzle lime juice over the top before serving.
