- 2 medium zucchinis
- 1 pound ground beef
- 1 cup diced tomatoes
- 1/2 cup onion, chopped
- 1 cup shredded cheese
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
Instructions
- Preheat your oven to 350°F (175°C).
- Slice the zucchinis in half lengthwise and scoop out the insides.
- In a skillet, cook the ground beef and onion over medium heat until browned.
- Add diced tomatoes, garlic powder, Italian seasoning, salt, and pepper to the skillet.
- Fill the zucchini halves with the beef mixture.
- Top with shredded cheese.
- Bake for 25-30 minutes until the zucchinis are tender.
Notes
- Feel free to add other vegetables to the beef mixture.
- Adjust seasoning according to your taste.
