Instructions
- Preheat your oven to 375°F.
- In a skillet, cook the ground turkey over medium heat until browned.
- Add black beans, corn, diced tomatoes, chili powder, and cumin. Stir well.
- Warm the tortillas in a separate skillet.
- Spoon the turkey mixture onto each tortilla and roll them up.
- Place the rolled tortillas in a baking dish and pour enchilada sauce over them.
- Top with shredded cheese.
- Bake for 20 minutes or until cheese is bubbly.
