Ingrédients

  • 6 cups water
  • 2 cups diced carrots
  • 2 cups diced celery
  • 1 cup chopped onion
  • 2 cups diced potatoes
  • 1 can (15 oz) white beans, drained and rinsed
  • 2 cloves garlic, minced
  • 1 teaspoon thyme
  • 1 bay leaf
  • Salt and pepper to taste

Instructions

  1. Add ham bone and water to a large pot.
  2. Bring to a boil and then reduce heat to simmer.
  3. Add carrots, celery, onion, and potatoes.
  4. Stir in white beans, garlic, thyme, and bay leaf.
  5. Simmer for 1.5 to 2 hours.
  6. Remove ham bone and let cool.
  7. Shred any remaining ham and return to soup.
  8. Season with salt and pepper to taste.
