  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1/2 cup buttermilk
  • 1/4 cup butterscotch sauce
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 cup whipped cream for topping
  • Butterscotch bits for garnish

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, cream the butter and sugar together.
  3. Add eggs one at a time, mixing well.
  4. Stir in buttermilk, butterscotch sauce, and vanilla.
  5. In another bowl, mix flour, baking powder, baking soda, and salt.
  6. Combine wet and dry ingredients until smooth.
  7. Fill cupcake liners 2/3 full with batter.
  8. Bake for 18-20 minutes or until a toothpick comes out clean.
  9. Let cool completely.
  10. Top with whipped cream and sprinkle butterscotch bits.
