Description
A warm and comforting Hawaiian style chicken long rice soup.
Ingrédients

- 1 lb chicken thighs, boneless and skinless
- 6 cups chicken broth
- 1 cup long rice (bean thread noodles)
- 1 onion, diced
- 2 cloves garlic, minced
- 1 inch ginger, sliced
- 2 green onions, chopped
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- Salt and pepper to taste
Instructions
- In a pot, heat sesame oil over medium heat.
- Add onions, garlic, and ginger. Sauté until fragrant.
- Add chicken thighs and cook until browned.
- Pour in chicken broth and bring to a boil.
- Reduce heat and simmer for 20 minutes until chicken is cooked through.
- Remove chicken, shred it, and return it to the pot.
- Add long rice and soy sauce. Cook until noodles are tender.
- Season with salt and pepper to taste.
- Garnish with green onions before serving.

- Use low-sodium chicken broth for a healthier option.
- Customize with vegetables like bok choy or mushrooms.
- Store leftovers in an airtight container in the fridge.
