Description
A healthier version of classic baked mac and cheese.
Ingrédients

- 8 oz whole wheat elbow macaroni
- 2 cups cauliflower florets
- 2 cups low-fat milk
- 2 cups shredded reduced-fat cheddar cheese
- 1/2 cup grated Parmesan cheese
- 1/4 cup whole wheat breadcrumbs
- 1 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp onion powder
- Salt and pepper to taste
Instructions
- Preheat your oven to 350°F (175°C).
- Cook the macaroni according to package instructions. Drain and set aside.
- Steam the cauliflower until tender. Blend with milk until smooth.
- In a pot, combine the cauliflower mixture, cheddar cheese, and Parmesan cheese. Stir until melted.
- Add the cooked macaroni to the cheese sauce. Mix well.
- Transfer to a baking dish and top with breadcrumbs and olive oil.
- Bake for 20 minutes or until golden brown.
Notes
- For added flavor, mix in cooked vegetables.
- Store leftovers in an airtight container.
- Reheat in the oven for best results.
