Ingrédients

  • 8 oz whole wheat elbow macaroni
  • 2 cups cauliflower florets
  • 2 cups low-fat milk
  • 2 cups shredded reduced-fat cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup whole wheat breadcrumbs
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cook the macaroni according to package instructions. Drain and set aside.
  3. Steam the cauliflower until tender. Blend with milk until smooth.
  4. In a pot, combine the cauliflower mixture, cheddar cheese, and Parmesan cheese. Stir until melted.
  5. Add the cooked macaroni to the cheese sauce. Mix well.
  6. Transfer to a baking dish and top with breadcrumbs and olive oil.
  7. Bake for 20 minutes or until golden brown.
