A healthy chicken crockpot recipe that is easy to prepare.

- 2 pounds of boneless, skinless chicken breasts
- 1 cup of low-sodium chicken broth
- 1 cup of diced tomatoes
- 1 cup of chopped vegetables (carrots, bell peppers, onions)
- 2 cloves of garlic, minced
- 1 teaspoon of dried oregano
- 1 teaspoon of paprika
- Salt and pepper to taste
Instructions
- Place the chicken breasts in the crockpot.
- Add the chicken broth, diced tomatoes, and chopped vegetables.
- Sprinkle garlic, oregano, paprika, salt, and pepper over the top.
- Cover and cook on low for 6-8 hours or high for 3-4 hours.
- Once cooked, shred the chicken with two forks and stir to combine.
- Serve warm and enjoy.

- You can substitute vegetables based on your preference.
- Serve with whole grain rice or quinoa for a complete meal.
