  • 1 cup quinoa
  • 2 cups vegetable broth
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 bell pepper, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup parsley, chopped
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions

  1. Rinse quinoa under cold water.
  2. In a pot, bring vegetable broth to a boil.
  3. Add quinoa and reduce heat. Cover and simmer for 15 minutes.
  4. Remove from heat and let it sit for 5 minutes.
  5. Fluff quinoa with a fork.
  6. In a large bowl, combine cherry tomatoes, cucumber, bell pepper, red onion, and parsley.
  7. Add cooked quinoa to the bowl.
  8. Drizzle olive oil and lemon juice over the salad.
  9. Season with salt and pepper. Toss to combine.
  10. Serve chilled or at room temperature.
