- 2 cups pumpkin puree
- 1 cup almond flour
- 1/2 cup maple syrup
- 1/4 cup coconut oil
- 3 eggs
- 1 teaspoon vanilla extract
- 1 teaspoon cinnamon

- 1/4 teaspoon salt
- 1/2 teaspoon baking soda
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, mix pumpkin puree, almond flour, maple syrup, and coconut oil.
- Add eggs and vanilla extract; stir until smooth.
- In a separate bowl, combine cinnamon, nutmeg, salt, and baking soda.
- Mix dry ingredients into the wet mixture until well combined.
- Pour the batter into a greased baking dish.
- Bake for 25-30 minutes or until a toothpick comes out clean.
- Allow to cool before serving.
Notes
- Store leftovers in an airtight container.
- Can be served with yogurt or whipped coconut cream.
- Adjust sweetness by adding more or less maple syrup.
