- 1 lb ground beef
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 can diced tomatoes (14.5 oz)
- 1 can kidney beans (15 oz), drained
- 1 can corn (15 oz), drained
- 2 cups cooked rice
- 1 cup shredded cheese
- 1 tsp chili powder
- 1 tsp cumin
- Salt and pepper to taste
Instructions
- Preheat oven to 350°F (175°C).
- In a large skillet, brown the ground beef with the onion and garlic.
- Stir in tomatoes, kidney beans, corn, rice, chili powder, cumin, salt, and pepper.
- Transfer the mixture to a baking dish.
- Top with shredded cheese.
- Bake for 25-30 minutes until heated through and cheese is melted.

- Can be made ahead and frozen.
- Serve with sour cream or avocado on top.
