  • 1 can diced tomatoes (14.5 oz)
  • 1 can kidney beans (15 oz), drained
  • 1 can corn (15 oz), drained
  • 2 cups cooked rice
  • 1 cup shredded cheese
  • 1 tsp chili powder
  • 1 tsp cumin
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large skillet, brown the ground beef with the onion and garlic.
  3. Stir in tomatoes, kidney beans, corn, rice, chili powder, cumin, salt, and pepper.
  4. Transfer the mixture to a baking dish.
  5. Top with shredded cheese.
  6. Bake for 25-30 minutes until heated through and cheese is melted.
