Description

Ingrédients

  • 1 cup cheddar cheese, shredded
  • 4 cloves garlic, minced
  • 1 onion, chopped
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt to taste
  • Pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion and garlic, sauté until onion is translucent.
  3. Add diced potatoes, vegetable broth, thyme, and rosemary.
  4. Bring to a boil, then reduce heat and simmer until potatoes are tender, about 15 minutes.
  5. Stir in heavy cream and cheddar cheese until melted and smooth.
  6. Season with salt and pepper to taste.
  7. Serve hot, garnished with additional cheese if desired.
