Ingrédients

- 4 medium potatoes, peeled and diced
- 1 cup cheddar cheese, shredded
- 4 cloves garlic, minced
- 1 onion, chopped
- 4 cups vegetable broth
- 1 cup heavy cream
- 2 tablespoons olive oil
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt to taste
- Pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion and garlic, sauté until onion is translucent.
- Add diced potatoes, vegetable broth, thyme, and rosemary.
- Bring to a boil, then reduce heat and simmer until potatoes are tender, about 15 minutes.
- Stir in heavy cream and cheddar cheese until melted and smooth.
- Season with salt and pepper to taste.
- Serve hot, garnished with additional cheese if desired.
Notes
- Store leftovers in the refrigerator for up to 3 days.
- This soup can be frozen; just reheat gently.
