  • 2 large eggs

  • 1 cup powdered sugar

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, cream together the butter, peanut butter, granulated sugar, and brown sugar until smooth.
  3. Add eggs one at a time, beating well after each addition.
  4. In another bowl, whisk together flour, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients and mix until just combined.
  6. Form dough into small balls and place them on a baking sheet.
  7. Flatten each ball with a fork to create a crisscross pattern.
  8. Bake for 10-12 minutes or until lightly golden.
  9. Let cookies cool on a wire rack.
  10. For the filling, mix powdered sugar and peanut butter until smooth. Spread between two cookies to create a sandwich.
