- 1 cup unsalted butter, softened
- 1 cup peanut butter
- 1 cup granulated sugar
- 1 cup brown sugar
- 2 large eggs
- 2 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup powdered sugar
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, cream together the butter, peanut butter, granulated sugar, and brown sugar until smooth.
- Add eggs one at a time, beating well after each addition.
- In another bowl, whisk together flour, baking soda, and salt.
- Gradually add the dry ingredients to the wet ingredients and mix until just combined.
- Form dough into small balls and place them on a baking sheet.
- Flatten each ball with a fork to create a crisscross pattern.
- Bake for 10-12 minutes or until lightly golden.
- Let cookies cool on a wire rack.
- For the filling, mix powdered sugar and peanut butter until smooth. Spread between two cookies to create a sandwich.
