Description
Delicious homemade oatmeal cream pies filled with sweet cream.
Ingrédients

- 1 cup all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon cinnamon
- 1 cup brown sugar, packed
- 1/2 cup granulated sugar
- 1/2 cup butter, softened
- 1 large egg
- 1 teaspoon vanilla extract
- 2 cups rolled oats
- 1 cup marshmallow fluff
- 1/2 cup powdered sugar
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, mix flour, baking soda, salt, and cinnamon.
- In another bowl, cream together brown sugar, granulated sugar, and butter.
- Add egg and vanilla to the sugar mixture and mix well.
- Gradually add the dry ingredients to the wet mixture.
- Stir in rolled oats until combined.
- Drop spoonfuls of dough onto a baking sheet.
- Bake for 10-12 minutes until golden brown.
- Let cool completely.
- For filling, mix marshmallow fluff and powdered sugar.
- Spread filling between two cookies to form a sandwich.
Notes
- Store in an airtight container.
- Try adding chocolate chips for extra flavor.
- These can be frozen for later.
