Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, mix honey, Dijon mustard, olive oil, garlic powder, salt, and pepper.
  3. Coat chicken breasts with the honey mustard mixture.
  4. Place chicken in a baking dish.
  5. Toss mixed vegetables in olive oil, salt, and pepper, then spread around the chicken.
  6. Bake for 25-30 minutes or until chicken is cooked through and vegetables are tender.
  7. Serve warm, drizzling extra glaze over chicken if desired.
