Instructions

  1. Soak black-eyed peas overnight in water.
  2. Drain and rinse peas.
  3. In a large pot, heat olive oil over medium heat.
  4. Add onion, bell pepper, and garlic. Cook until softened.
  5. Add soaked peas, ham hock, and water. Bring to a boil.
  6. Reduce heat and simmer for 1 hour.
  7. Add rice, salt, black pepper, and cayenne. Stir well.
  8. Cover and cook until rice is tender, about 20 minutes.
  9. Remove ham hock and shred meat. Stir back into the pot.
  10. Serve warm.
