Description
A classic Southern dish made with black-eyed peas and rice.
Ingrédients

- 1 cup dried black-eyed peas
- 4 cups water
- 1 cup long-grain white rice
- 1 onion, chopped
- 1 green bell pepper, chopped
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon cayenne pepper
- 1 smoked ham hock
- 2 tablespoons olive oil
Instructions
- Soak black-eyed peas overnight in water.
- Drain and rinse peas.
- In a large pot, heat olive oil over medium heat.
- Add onion, bell pepper, and garlic. Cook until softened.
- Add soaked peas, ham hock, and water. Bring to a boil.
- Reduce heat and simmer for 1 hour.
- Add rice, salt, black pepper, and cayenne. Stir well.
- Cover and cook until rice is tender, about 20 minutes.
- Remove ham hock and shred meat. Stir back into the pot.
- Serve warm.
Notes
- This dish is traditionally served on New Year’s Day for good luck.
- You can substitute the ham hock with turkey for a lighter option.
- Add hot sauce for extra heat.
