Description

Hoppin’ John is a traditional Southern dish made with black-eyed peas and rice.

  • 4 cups water

  • 1 teaspoon salt

Instructions

  1. Soak black-eyed peas overnight.
  2. Drain and rinse peas.
  3. In a pot, heat olive oil over medium heat.
  4. Add onion and garlic, sauté until soft.
  5. Add soaked peas and water, bring to a boil.
  6. Reduce heat, cover, and simmer for 30 minutes.
  7. Add rice, salt, and pepper.
  8. Cook for an additional 20 minutes or until rice is tender.
  9. Stir in diced ham or bacon if using.
  10. Serve warm.
