Description
A traditional Southern dish made with black-eyed peas and rice.
Ingrédients

- 1 cup black-eyed peas
- 1 cup long-grain rice
- 4 cups water
- 1 onion, chopped
- 1 green bell pepper, chopped
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 bay leaf
- 4 slices cooked bacon, chopped
Instructions
- Soak black-eyed peas overnight in water.
- Drain and rinse the peas.
- In a large pot, cook bacon over medium heat until crispy.
- Add onion, bell pepper, and garlic; sauté until soft.
- Add peas, water, salt, pepper, and bay leaf.
- Bring to a boil, then reduce heat and simmer for 30 minutes.
- Add rice and stir well.
- Cover and simmer for an additional 20 minutes, or until rice is tender.
- Remove bay leaf and serve hot.
Notes
- Use smoked sausage instead of bacon for a different flavor.
- Serve with cornbread for a complete meal.
