Description

  • 4 slices cooked bacon, chopped

Instructions

  1. Soak black-eyed peas overnight in water.
  2. Drain and rinse the peas.
  3. In a large pot, cook bacon over medium heat until crispy.
  4. Add onion, bell pepper, and garlic; sauté until soft.
  5. Add peas, water, salt, pepper, and bay leaf.
  6. Bring to a boil, then reduce heat and simmer for 30 minutes.
  7. Add rice and stir well.
  8. Cover and simmer for an additional 20 minutes, or until rice is tender.
  9. Remove bay leaf and serve hot.

Notes

  • Use smoked sausage instead of bacon for a different flavor.
